BBQ Chicken Sandwiches
Easy chicken sandwiches with an amped up BBQ sauce.
1 ½ cups BBQ sauce, of your choice
¼ cup spicy brown mustard
¼ cup fish sauce
1 ½ pounds Rotisserie chicken, shredded
¼ cup butter
2 tablespoons olive oil
1 large onion, sliced
3–4 jalapenos, sliced, leave in the membranes and seeds
4 garlic cloves, minced
Swiss Cheese slices
Combine BBQ sauce, mustard and fish sauce together and whisk to combine. Add the rotisserie chicken,
and toss to combine.
Heat butter and olive oil in a saute pan, over medium heat. Add the onions and jalapenos, season with
salt. Saute over medium low heat until they start to caramelize. Add a tablespoon more butter and the
garlic and continue until fragrant. Remove from heat.
Split the hoagie buns and lay slices of cheese on the bottom. Top with BBQ chicken, and then add the
jalapeno/onion mixture on top.
