Classic cheesecake with an amaretto spin.
12 oz. graham crackers, crushed to a fine crumb
¼ cup almonds, pulverized
1/4 cup sugar
6 Tbsp salted butter, softened or melted
4 (8 ounce) packages cream cheese, at room temp!!!!!
1 ¼ cups white sugar
3 tablespoons all-purpose flour
6 tablespoons amaretto liqueur
Pinch of salt
Graham crackers, crushed
Preheat oven to 325 degrees F
In a medium bowl combine graham crackers, almonds, sugar and butter. Press into the bottom of a
greased 9 inch spring form pan.
Bake in preheated oven for 10 minutes. Place on a wire rack to cool.
Preheat oven to 350F.
In a food processor combine cream cheese, sugar, flour and amaretto; process until smooth. Blend in
eggs, but DO NOT OVER MIX. Pour mixture into cooled crust. You may not need all of the mixture!
Bake for 1 hour. Remove and cool completely. Serve with a dollop of whipped cream and crushed
