Cajun Shrimp over Creamy Polenta

Ingredients

Scale

Shrimp, peeled, deveined, and butterflied

½ teaspoon cayenne

1 teaspoon thyme

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon kosher salt

½ teaspoon white pepper

Olive oil
Juice of one lime

Cilantro, chopped for serving

4 cups chicken stock

1 cup milk

½ cup butter

1 cup polenta

1 cup shredded pepper jack cheese

TT salt & pepper


Instructions

In a saucepan, heat together chicken stock, milk, and butter, until butter is melted.  Whisk in polenta gradually and keep whisking so clumps don’t form.  Heat over low heat, whisking every minute, until liquid is absorbed (about 10 minutes). Turn heat to low. Cook for at least 30- 45 minutes, stirring every 10 minutes or so. If polenta becomes thick, thin it with ½ cup water, stir well and continue cooking. Add up to 1 cup more water as necessary, to keep polenta soft enough to stir. Taste for consistency. If too thick, add more milk. Once desired consistency is achieved, add in cheese and stir to melt. Taste again for seasoning and add salt and pepper to taste.

Meanwhile, pat shrimp dry.  Whisk seasonings together, then add olive oil and lime juice to make a paste.  Rub all over the shrimp.  Sear on both sides until done.  Serve over the creamy polenta, topped with chopped cilantro.
