Ingredients

Scale

1 head romaine lettuce, halved

Olive oil

1/2 cup parmesan cheese, grated

lemon wedges for serving and squeezing over salad

FOR THE DRESSING

½ cup mayonnaise

1 ½ teaspoons kosher salt

2 garlic cloves, minced

1 tablespoon onion powder

23 tablespoons lemon juice or 1 lemon zested and juiced; adjust to your taste

½ teaspoon smoked paprika

¼ teaspoon turmeric

Pinch cayenne pepper

2 tablespoons White wine vinegar for thinning, you may need more


Instructions

Make the Dressing.  Combine mayonnaise, kosher salt, garlic, lemon zest and juice, paprika, turmeric, and cayenne, and whisk vigorously to combine.  Add white wine vinegar to thin to pourable consistency.

Heat the grill to medium-high to high heat.

Grill Romaine: Lightly coat romaine lettuce head with oil and sprinkle with kosher salt. Grill the lettuce until they’re individually cooked and slightly charred.

Allow lettuce to cool slightly. Lay romaine on large platter, drizzle dressing on top and sprinkle with cheese. Cut into thick slices for serving.  Serve with lemon wedges and enjoy!
