Description

Cozy soup season at its finest 🍲
This zuppa toscana is everything I want on a chilly day; spicy sausage, tender potatoes, a hit of garlic, and that creamy broth that makes you go back for just one more spoon. Hey, I won’t tell.  Comfort food that hugs you back, just as it should.

 


Ingredients

Scale

Olive oil

1 lb Italian sausage, spicy

1 ½ teaspoon red pepper flakes

1 onion, chopped

4 cloves garlic, minced

Kosher salt and black pepper

¼ teaspoon cayenne pepper

1 teaspoon accent seasoning

6 yukon gold potatoes, chopped

6 cups chicken broth

½ package kale, woody stems removed

1 cup heavy cream

2 tablespoons flour

Parmesan cheese, grated


Instructions

In a large dutch oven, add olive oil and sausage; breaking it up with a wooden spoon, Add the red pepper flakes and saute until cooked through.  Add onion and garlic, sauteing until soft and translucent.  Sprinkle with salt, black pepper, cayenne pepper, and accent seasoning and work into the mix.  Add potatoes and saute until they soften slightly.  Pour in the chicken broth and bring to a boil.   Add in the kale, pushing it down into the broth with a wooden spoon.  Cover and reduce to simmer for 15-20 minutes, until the potatoes are soft.  Mix the cream and flour together, whisking well, so there are no lumps.  Add to the soup and stir well to thicken.  Serve with parmesan grated over the top.
