Bowls of comfort just hit different 🤍🥣
Made a batch of my White Chicken Chili today and WOW—creamy, cozy, a little zesty, and exactly what cold-weather cravings are made of. Tender chicken, white beans, green chiles, and all that warm, rich flavor that basically feels like a hug in a bowl.

Topped it off with cilantro, lime, and a side of chips, because… why not?


Ingredients

Scale

Olive oil

1 onion, diced

1 jalapeno pepper, minced

1 poblano pepper, minced

4 garlic cloves, minced

2 teaspoons cumin

1 teaspoon oregano

1 teaspoon red pepper flakes

½ teaspoon smoked paprika

Pinch of cayenne pepper

1 large can green chilies

6 cups chicken broth

34 cups Chicken, shredded

3 can cannellini beans, drained

Juice of 2 limes

½ bunch fresh cilantro, chopped

Garnishes, Optional

Shredded cheese

Tortilla chips

Rice

Sour cream

Lime wedges


Instructions

Heat oil in a large dutch oven, and saute onion, jalapeno, and poblano until softened.  Add the garlic and saute just until fragrant.  Add the seasonings and work them into the vegetables.  Add the green chilies and chicken broth and bring to a boil.  Reduce to simmer.  Add the chicken and simmer for 15 minutes.  Add the beans and lime juice, and simmer; just until heated through.  Top with fresh cilantro and serve with the garnishes.
