Ingredients

For the Hot Honey:

½ cup honey

4 tablespoons butter

2 teaspoons smoked paprika

1 ½ teaspoons cayenne

1 teaspoon garlic powder

Pinch kosher salt

For the Salmon:

1 salmon fillet, check for pin bones
1 teaspoon thyme

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon kosher salt

½ teaspoon cayenne

½ teaspoon white pepper
1tablespoon olive oil

Juice of one lime
Cilantro, chopped for serving


Instructions

Preheat the oven to 400F and line a baking sheet with parchment paper.
Combine the honey, butter, cayenne, smoked paprika, garlic powder, and kosher salt and heat together until the honey and butter are melted (either in the microwave or a small saucepan on the stove).  Set aside.   Whisk the thyme, smoked paprika, garlic powder, onion powder, kosher salt, cayenne pepper, and white pepper together; then add the olive oil and lime juice and mix to form a paste.  Rub the paste all over the flesh of the salmon and place the salmon on top of the prepared baking sheet.  Pour about ½ of the hot honey over the salmon and spread it around until well coated. Bake for 14-17 minutes, or until salmon is 130-135F internal temp.  Take out and sprinkle with cilantro.  Serve over cooked rice with additional hot honey for drizzling
