Smoky, spicy, and oh-so juicy 🔥🍗 My chipotle roasted chicken thighs are roasted until the skin is crispy perfection, with a smoky heat that’s balanced by just the right touch of tang. The chipotle rub seeps into every bite, giving that deep, bold flavor you can’t stop thinking about. Perfect with roasted veggies, rice, or just straight off the pan… because honestly, who’s judging? 😏

Ingredients

2 pounds chicken thighs, bone-in, skin on

Kosher salt and black pepper

2 lime, juiced

2 chipotle peppers in adobo, minced

2 tablespoons adobo sauce

1 tablespoon brown sugar

1 tablespoon smoked paprika

1 ½ teaspoons cumin

1 ½ teaspoons oregano

1 teaspoon onion powder

1 teaspoon garlic powder

2 tablespoons olive oil

1 red onion, sliced

2 bell peppers, (orange, yellow, or red) sliced

1 poblano pepper, sliced

Cilantro, chopped for serving


Instructions

Place chicken in a large bowl. Season with salt and pepper. In another bowl, whisk together lime juice, chipotle peppers, adobo sauce, brown sugar, paprika, cumin, oregano, onion powder, garlic, and olive oil.   Pour over chicken and toss to coat. Set aside for 30 minutes.

Heat oven to 425F and line a large baking sheet with parchment paper. Lay the onions and pepper slices on the baking sheet.  Lay the chicken on top of the peppers and onions in a single layer roast for 30-40 minutes, or until the chicken is 165F internal temperature.  Sprinkle with chopped cilantro and serve.
