Made a batch of creamy rice pudding today — warm, sweet, and full of nostalgia. Perfectly cooked rice simmered in milk, a touch of vanilla, a sprinkle of cinnamon, and just the right amount of love. 🥄💛

 

There’s something so simple yet so comforting about this classic dessert — whether served warm or chilled, it never fails to hit the spot.


Ingredients

1 ½ cups cold water

1 teaspoon sea salt

¾ cup uncooked white rice

2 cups whole milk, divided

⅓ cup white sugar

Cinnamon stick

¼ teaspoon salt

1 egg yolk, beaten

⅔ cup golden raisins, opt.

1 tablespoon butter 

1 ½ teaspoons vanilla


Instructions

Pour water into a saucepan and bring to a boil over medium heat; stir in rice. Reduce heat to low, cover, and simmer until rice is tender and liquid has been absorbed, about 15 minutes.

Combine cooked rice, 1 ½ cups milk, sugar, cinnamon stick, and salt in a clean saucepan. Cook over medium heat, stirring often, until thick and creamy, about 15 minutes.  Heat the remaining liquid just to a simmer and add it into the egg yolk to temper it, then add it to the pudding and let it thicken it.

Remove the cinnamon stick.  Stir in remaining milk, and raisins (if using); cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla until combined; serve warm.
