Parmesan Pistachio Green Beans

Description

These parmesan pistachio green beans are one of my family’s favorite side.  Crisp tender beans tossed with nutty parmesan, crunchy pistachios, and a hit of fresh dill for that bright, herby finish. Simple, a little fancy, and seriously addictive. They might become your family’s favorite as well!  Who says green beans have to be boring?


Ingredients

Scale

2 lbs fresh green beans, trimmed

Olive oil

Kosher salt and black pepper

2 lemons, zested and juiced
1 garlic clove, minced

¼ cup olive oil

1 teaspoon kosher salt

½ teaspoon black pepper

½ cup pistachios, rough chop

1 bunch dill, chopped

½ bunch parsley, chopped

4 scallions, chopped
½ cup parmesan cheese, grated


Instructions

Preheat oven to 425F.  Line a baking sheet with parchment paper.  Toss the green beans with a little bit of olive oil, then pat dry.  Lay on baking sheet and sprinkle with salt and pepper.  Roast for 20-15 minutes until nicely browned.  Remove and put them in a large bowl.  In a glass measuring container, add the lemon zest and juice, garlic, olive oil, salt and pepper; and whisk to combine.  Pour over the green bean mixture and toss well.  Add the pistachios, dill, parsley, scallions, and parmesan, tossing to combine.  Serve.
