
Chocolate Lava Cake
Description
Who needs a fancy restaurant when you can have an upscale dessert right at home? This chocolate lava cake is rich, warm, and perfectly gooey in the center… and even better paired with a nice glass of red. Cozy, indulgent, and just a little bit luxurious. Elevated date night, but made at home.
Ingredients
6 ounces/70 to 74 percent (bar not chips), chopped
6 tablespoons butter, cut into cubes, plus more greasing
6 tablespoons sugar
2 eggs
2 egg yolks
½ teaspoon vanilla extract
⅛ teaspoon kosher salt
2 tablespoons flour
Confectioners’ sugar, to serve (optional)
Whipped Cream for serving
Instructions
Preheat oven to 425F degrees and butter four 6-ounce ramekins, then dust lightly with cocoa powder, tapping out the excess.
In a small saucepan, set over a pan of simmering water, melt the butter and chocolate together until smooth. Remove from heat and let cool slightly.
In a medium bowl, whisk together the sugar, egg, egg yolk, vanilla and salt, until thick, foamy and pale, about 2 minutes. Whisk in the flour until smooth.
Using a spatula, add the chocolate to the egg mixture and stir gently until combined.
Pour the mixture into the ramekins and place on a baking sheet. Bake for 12 to 14 minutes or until the edges firm but the center is still soft. Remove and use a sharp knife to loosen the edges of the cakes from the ramekins, then quickly invert onto plates. Serve with vanilla ice cream or whipped cream, and dust with powdered sugar.
