
Cherry Pistachio Cookie Skillet

This pistachio cherry white chocolate chip cookie skillet came out soft in the middle, crisp on the edges, and loaded with nutty crunch, dried cherries, and melty white chocolate. Best served straight from the skillet… preferably with a scoop of vanilla on top and zero regrets.

Ingredients
1 cup butter, room temperature
1 cup packed dark-brown sugar
¾ cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 ½ cups flour
2 tablespoon cornstarch
1 teaspoon baking soda
1 teaspoon coarse salt
1 cup white chocolate chips
½ cup pistachios
½ cup dried cherries
Instructions
Preheat oven to 350F. Beat butter and sugars together. Add in eggs and vanilla and beat again until smooth. Sift dry ingredients together and mix in, just until combined. Add in the chocolate chips, pistachios and dried cherries and mix just until they are mixed through. Place in a 10 inch cast iron skillet and smooth the top. Bake for 18-20 minutes, or until the top is starting to brown. Remove and cool slightly. Slice and serve with vanilla ice cream.
