🔥 JERK INSPIRED CHICKEN VIBES 🔥
This one brings the heat and the flavor! My homemade jerk inspired chicken is smoky, spicy, juicy, and packed with island flavor in every bite. 🍗🌶️🍍

Marinated overnight in all the good stuff—habaneros, thyme, cinnamon, garlic, and a splash of citrus—then roasted to perfection. Served it up with rice and onion/pepper mixture on the side, and let me tell you… not a crumb left.

Caribbean cravings = satisfied. 💯


Ingredients

Scale

2-3 pounds bone in, skin on, chicken thighs

1 onion, quartered

6-8 scallions

2 jalapenos

2 habaneros

1 2-inch piece fresh ginger, peeled and coarsely chopped

3 garlic cloves, peeled

2 tablespoons brown sugar

1 tablespoon Chinese five spice

1 tablespoon black pepper

2 teaspoons salt

1 ½ teaspoons thyme

1 teaspoon cinnamon

½ teaspoon nutmeg

½ cup tamari

2 tablespoons white wine vinegar

¼ cup vegetable oil

3 limes, juiced

Red bell pepper, thinly sliced

2 Orange bell peppers, thinly sliced

2 Yellow bell peppers, thinly sliced

Red onion, thinly sliced

Cooked white rice for serving

Cilantro, chopped for serving


Instructions

Put onion, scallions, jalapenos, habaneros, ginger, garlic, brown sugar, five spice, black pepper, salt, thyme, cinnamon, nutmeg, tamari, vinegar, oil, and lime juice in a blender and grind to a coarse paste.  Rub all over the chicken, in a bowl, turning to coat well.  Chill for at least 2 hours, but up to overnight. 

Preheat oven to 425.  Lay the peppers and onions in a large cast iron skillet.  Place the chicken pieces on top the peppers and onions, skin side up and roast for 40-45 minutes or until the internal temperature is 165F and the skin is crispy.  Serve over the rice, sprinkled with cilantro.
